10 quarts water
½ cup liquid smoke
5 tablespoons garlic powder
5 tablespoons onion powder
5 tablespoons Cajun seasoning
5 racks baby back pork ribs
Pour the water and liquid smoke into a large roasting pan set across two burners. Combine the spices in a mixing bowl. Add half the spice mixture to the water. Place the ribs in the water and cover. Bring the water to a boil, then simmer for 1½ hours or until tender.
When the ribs are tender, drain them and let cool. Preheat the oven to 350°F. When the ribs are cool enough to touch, rub them with the remaining spice mixture. Return the ribs to the roasting pan and place in the oven for 20 minutes to let the rub penetrate the meat.
